Madeleine Pan

Whether a madeleine is your “madeleine of Proust” or not, this little sponge cake from the Lorraine region will definitely satisfy your French pâtisserie craving. They are quite easy to bake but require a special pan like this one to acquire their distinctive shell-like shape. They are often flavoured with finely ground almonds, orange blossom water or lemon zest and are famously dipped in tea.
